Citrus Radiance Cake

This Radiance Citrus Cake is a naturally sweet, nutrient-dense dessert designed to delight the senses while supporting your body’s deeper needs. Made with whole orange (yes, peel and all), blood-sugar-friendly almond flour, gut-supportive basil seeds, and antioxidant-rich cacao nibs, this cake offers a bright, spiced flavor that nourishes from within.

Lightly sweetened with honey and infused with citrus and warm spices, it’s a beautiful way to enjoy dessert without the crash.


Ingredients

1 large organic orange (washed, skin-on)
3 eggs
¼ to ⅓ cup honey (adjust to taste)
1½ cups almond flour
1–2 tablespoons coconut milk (adjust to consistency)
2 tablespoons basil seeds
2 tablespoons cacao nibs
½ teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon pure vanilla extract
¼ teaspoon orange essence or orange extract
2 tablespoons pea protein powder (optional)

Instructions

Boil the orange:
Place the whole orange (with peel) in a pot of water. Bring to a boil and simmer for 20 minutes. Drain and let it cool slightly.

Preheat oven:
Preheat your oven to 350°F (175°C). Line a loaf pan or cake tin with parchment paper or lightly grease.

Blend the orange:
Cut the cooked orange into chunks (remove seeds if present) and blend in a high-speed blender until completely smooth.

Whip the eggs:
In a stand mixer or with a hand mixer, beat the eggs for 5 minutes until light, fluffy, and pale in color.

Add wet ingredients:
Gently mix in the honey, coconut milk (start with 1 tablespoon and adjust as needed for a smooth batter), vanilla, orange essence, and orange purée.

Mix dry ingredients:
In a separate bowl, combine almond flour, basil seeds, cacao nibs, cardamom, cinnamon, baking powder, and pea protein powder (if using).

Combine:
Fold the dry ingredients into the wet mixture and stir until just combined—don’t overmix. If the batter feels too thick, add a touch more coconut milk.

Bake:
Pour into the prepared pan, smooth the top, and bake for 35–40 minutes, or until a toothpick comes out clean.

Cool & serve
