Ingredients

1 large aubergine, sliced
1 tbsp olive oil
Salt and black pepper, to taste
½ cup Greek yogurt
½ tsp curry powder
1 tbsp lime juice
2 tbsp fresh coriander, chopped

Instructions

Roast the Aubergine
Preheat the oven to 425°F. Line a baking tray with parchment paper and arrange the aubergine slices on top. Drizzle with olive oil, season with salt and black pepper, and roast for 25–30 minutes, until golden and slightly charred.

Prepare the Yogurt Sauce
In a small bowl, mix the Greek yogurt, curry powder, and lime juice until well combined.

Assemble & Serve
