Ingredients
1 cup shredded red cabbage
1/2 cup spinach, roughly chopped
1 cup cooked white beans, drained and rinsed
1 medium beet, cooked and cut into small squares (cubed)
1 medium carrot, grated
1/2 cup pomegranate arils
2 tablespoons pumpkin seeds
A bunch of cilantro, stems removed, chopped
1/4 cup red onions, chopped
Dressing
Chocolate vinegar (used as the dressing)
Optional Dressing Instead
Balsamic vinegar or lemon
Olive oil
Salt and pepper
(Substitutions: If you don't like spinach or cilantro, you can substitute with parsley or arugula.)
Instructions
Combine the red cabbage, spinach, white beans, cooked cubed beets, carrot, pomegranate arils, pumpkin seeds, cilantro (stems removed), and chopped red onions.
Toss gently.
Dress with chocolate vinegar, or use the optional balsamic vinegar or lemon with olive oil, salt, and pepper.
