Ingredients

2 bags frozen strawberries

2 tablespoons chia seeds

2 tablespoons maple syrup (I usually use 2, but you can add more if you like it sweeter)

Juice of ½ lemon

Instructions

Add the frozen strawberries to a saucepan over medium heat. As they warm up they’ll release their juices. Stir occasionally and let them cook for about 15–20 minutes, checking regularly. Mash the strawberries with a spoon or potato masher to get the texture you like.

Once the strawberries have broken down and look jammy, stir in the maple syrup, lemon juice, and chia seeds and mix well.

Let the mixture simmer another 5–7 minutes, stirring occasionally.

Remove from heat and let it sit for about 10–15 minutes so the chia seeds can thicken the jam.

Transfer to a glass jar and refrigerate. It will thicken more as it chills.
