Persian Cucumber Feta Bites

Ingredients
2 Persian cucumbers, sliced into ¼-inch rounds
6 cherry tomatoes, halved into circles
3 oz feta cheese, cut into small squares or crumbles
Fresh basil leaves, small or torn into pieces
Coarse sea salt or Himalayan pink salt, to taste
Extra-virgin olive oil (optional)
Instructions
Slice the Persian cucumbers into even rounds and arrange them flat on a serving plate.
Cut the feta into small squares (about the same size as the cucumber slices) and place one piece on top of each cucumber round.
Slice the cherry tomatoes crosswise into thin circles and place one on top of the feta.
Garnish each bite with a small basil leaf.
Finish with a light sprinkle of coarse salt. Drizzle with a touch of olive oil if desired.
